Buffalo Chicken Tenders
lb boneless, skinless chicken breast cut into -inch thick strips 1TB unsalted butter, melted 1 TB hot pepper sauce cup reduced fat blue-cheese dressing 2 TB low-fat (1%) milk Spray a broiler rack with nonstick cooking spray. Preheat the broiler. Toss the chicken strips with the melted butter and hot pepper sauce. Arrange chicken on rack and place in a broiler pan. Drizzle any remaining mixture over chicken. Broil 5 inches from heat, turning once, about 8 minutes. Whisk the blue-cheese dressing and milk together in a bowl. Serve dressing with chicken. Garlic Dill Dip
2 cloves fresh garlic, crushed, or 2 tsp minced garlic 6 TB fat-free sour cream 6 TB Miracle whip Light 1 tsp dried dill weed 3 TB fresh lemon juice salt and pepper to taste Mix, chill for one hour. Serve with sliced cucumbers and zucchini, celery, carrots, pepper strips or your favorite veggie dipper. Hot Bean and Cheese Dip 1 (14.5-ounce) can diced tomatoes, drained and divided 1/2 teaspoon hot pepper sauce 1/4 teaspoon salt 1/4 teaspoon ground cumin 1/4 teaspoon dried oregano 1 (16-ounce) can pinto beans, rinsed and drained 1 (16-ounce) can fat-free refried beans 1 (4.5-ounce) can chopped green chilies, drained Cooking spray 3/4 cup (3 ounces) shredded sharp cheddar cheese Preheat oven to 350F. Combine 1 cup tomatoes and the next 7 ingredients (1 cup tomatoes through chilies). Spoon tomato mixture into a 1 1/2-quart casserole dish coated with cooking spray. Top with cheese. Bake at 350F for 20 minutes or until cheese is melted. Top with remaining tomatoes. Makes 10 servings (1/2 cup) Points: 3 Serve with baked tortilla chips and veggie dippers. Chewy Chocolate Cookies 1 (18.25-ounce) package light devil's food cake mix 2 tablespoons stick margarine or butter, softened 2 tablespoons water 2 large egg whites 1 large egg 3/4 cup semisweet chocolate chips Cooking spray Preheat oven to 350. Combine first 5 ingredients in a large bowl; beat at medium speed of a mixer 2 minutes. Stir in chocolate chips. Drop by rounded tablespoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350 for 10 minutes. Remove from pans; cool on wire racks. Store in an airtight container.
