12 oz cod fillets
1 beaten egg white
½ cup Italian-seasoned bread crumbs
Cooking spray
2 md-sized brown potatoes or 6 small (1 inch) red or white potatoes
Scrub potatoes and cut lengthwise into shoestring size fries. Rinse with ice-water, pat dry. Spray a cookie sheet with cooking spray and layer the fries in one layer. Spray fries with cooking spray and sprinkle with seasoning- (Seasoned salt, paprika, chili powder, or whatever you like.)
Bake at 450 oven for about 20 minutes or so until just about done, stirring occasionally.
Meanwhile
Rinse fish and pat dry. Dip fillets into beaten egg white and then into bread crumbs. Place on another cookie sheet sprayed with cooking spray. Spray fish with cooking spray.
Turn oven down to 350, place fish in oven with fries. Bake for about 20 minutes or until fish flakes easily with a fork.

I like to serve with a cucumber and tomato salad (Just mix and sprinkle with balsamic vinegar.)
