Lemon Chicken with Vegetables

4 boneless skinless chicken breasts

cup lemon juice

1 tsp lemon zest

2 Tbs honey

2 Tbs vegetable oil

2 Tbs fresh chopped rosemary

1 lb (approx 8) baby red potatoes

1 lb (approx 8) carrots peeled and chopped into 1 inch pieces

 

Partially boil potatoes and carrots approx 1 min.  Rinse in cool water, drain, and set aside.  Marinate chicken in the remaining ingredients for 30 minutes to several hours.  Cover chicken and bake at 375 degrees for 30 minutes.  Remove cover, add potatoes and carrots and bake for another 20 minutes.

 

Serves 4 at 6 points each
